Sick Days

Cecilia and Julian have had a cold this week.  I'm certain I wished this upon our family, feeling too much hustle and bustle, I thought to myself, "Its about time we were quarantined and had to stay home."  Okay, I didn't wish to be quarentined, but last week, going into town three days, I definitely wished we could stay home more often.  And so . . . here we are, reading, baking, playing cards, playing outside, going for the occasional tractor drawn hay ride, bucking hay (64 bales, thank you) and wiping noses.  I'll take a cold over any other illness any day.

Here is Julian's Add Anything Muffin Recipe.  This is the absolute best recipe for baking with small children, toddlers especially.  Its bomb proof.  We usually just measure all the ingredients into the bowl while stirring and tasting, then when we get to the 'add anything' section, I get out bags of raisins, nuts, coconut, pumpkin, peanut butter, chocolate chips, cacao nibs, or whatever you have laying around and let the little helpers just dump in whatever, however.  They always turn out great and kiddos get the cred for the yumminess.
Today's muffins were made with walnuts, raisins, chocolate chips, tons of baked pumpkin (seeds and all,) molasses instead of honey (we're out of honey) a touch of extra baking soda (we're out of baking powder) and allspice instead of nutmeg (I guess we need to go to the store!)
We use Pamela's Gluten Free Baking and Pancake mix which is pricey but worth it for the consistency.
I always wish I made a double batch!  Hopefully I'll remember next time.
Cecilia wanted me to post this picture.  She has a fever face.  Nice rosey cheek-y-ness.  And oh, its warm hat season, at last . . . I love warm hats!
